The excellence of Witchmount's superlative wines are based around parcels of closely managed Shiraz, cultivated by a grower who was raised amongst his vines and knows each planting intimately. A soundly structured, profoundly satisfying, classic style of Victorian, spiced plum, cool clime Shiraz.

Cool balmy climes and close husbanding of vines are essential for splendid Pinot Gris wines which engage the palate while calling for cuisine. Pampered parcels of grey Pinot grapes are treated to a natural indigenous yeast ferment, a course of maturation on fluffy lees and term of age in fine French oak, bottled unfined for maximum sauvage. Steeped on skins for optimal uptake of the distinctive Gris blush, its comely copper hues and Anzac biscuit nose, precedes a food friendly palate of baked cloven pears and crunchy Granny Smith acidity.

Witchmount are fortuitously positioned within the temperate microclimes of Sunbury, just the right confluence of conditions to yield a style of Shiraz Grenache that's so evocative of the chilly Mistral winds which stimulate vineyards along Vallée Rhône. An equal balance of parts, Grenache is included as whole bunches, Shiraz berries are destemmed, treated to traditional open top ferments and six months gross lees maceration for exceptional richness and integration. A decidedly juicy, cherry flavoured accord of dark licorice tannins, bucolic herbaceousness and sylvan, pastoral grace.

Half Chardonnay, the balance in Sauvignon Blanc and Pinot Gris, this is not the first time that such an unlikely cépage of fruit have been assembled into a single wine. The propitious Witchmount vines are not far from from the relative comfort of Melbourne city but the surrounding Sunbury mesoclimes are very cool climate indeed. These are parts that are highly opportune for yields of Cabernet Sauvignon, characterised by intensely flavoured little berries lined with refined, elegant tannins. The closest husbandry and an uncompromising standard of viticulture, mean that Witchmount can produce one of Victoria's stateliest Cabernet wines, crafted to a style that's so evocative of her siblings from Bordeaux.

The light bodied, table ready wines of Piedmont are perfect for light, Mediterranean cuisine and appetizing Al fresco fare. Barbera is the grape of choice, it thrives and readily produces a bountiful harvest, fastidious pruning and a serious limiting of yields are essential to achieving a quality Barbera wine. The Witchmount team take aim at a judiciously savoury, herbs and olive style, set against a backdrop of juicy cherry flavours and subdued, seasoned oak, ripe tannins provide the length, exquisite balance and a measure of sophistication.

Shiraz grapes are sourced from the estate's Ghorepani block, an east facing vineyard planted to well drained, fertile soils. A close affinity to the land, respect for the vine and dedicated viticulture is the key to making a resplendent Victorian Shiraz, with the emphasis on maximising grape quality through sustainable agriculture. Wildwood are recognised for their consistency and purity of varietal character. Despite the adversity of limited rainfall, Wildwood consistently yields the quality of intense, ripe Shiraz fruit for which Sunbury is renowned.

Wildwood's vines are planted to the nethermost terroirs of the Sunbury region, where the cool, dry climes under the shadows of Mt. Macedon, serve to concentrate and intensify characters in the grapes. History records that great wines were made in this area from as far back as the early 1800s. Viticulture was re-established in 1983, the Pinot Noir grown here translates into vigorous wines with distinctive varietal expressions. Effulgent acids, complimenting oak and spritely tannins support generous fruit characters, licorice, cherries and plum.

Located in the cool, dry Sunbury region, Wildwood have been quietly crafting wines of elegance and balance since 1983. Priority is given to managing the land with care and respect, allowing the vines to express their character as naturally as possible. Chardonnay from two blocks on the Wildwood estate are fashioned to old world charm and contemporary styling. The Chardonnay of choice to accompany grilled salmon or guinea fowl, wet cheeses and all good faire.

Established 1968 by the legendary Melbourne restaurateur Tom Lazar, Virgin Hills is the gem of the Macedon Ranges, one of Australia's iconic vineyards. He planted Cabernet Sauvignon and Shiraz, Malbec, Merlot and Pinot Noir, with a view to creating an Australian first growth to rival the great Bordeaux he had grown to love while working as a sculptor in Paris. Only one wine is bottled under the Virgin Hills label each year. A stylish wine crafted from the holy triumvirate of sparkling grape varietals, Taltarni were one of Australia's first wineries to get serious about quality effervescence, they are still setting the benchmark. Taltarni have continued the evolution, so very well endowed with exceptional quality fruit, nurtured exclusively for sparkling wines, grown to vineyards across Victoria's splendid Pyrenees and Macedon Ranges. An assemblage of Chardonnay, Pinot Noir and Meunier of current vintage with a third of reserve wines.

The dedicated growers on Scotchman's Hill are heirs to a tradition of producing the finest white wine grapes. They attend to the Bellarine peninsula's premier terroirs, nurturing vines to sprout much of Victoria's most articulate fruit. The team have assembled harvests of the most amenable Sauvignon Blanc, to be vinified into a refreshing post modern style, brimming with citrus, bright herbaceousness and a touch of quenching minerality. Swan Bay is the sumptuous second tier of Geelong's leading winemaker. Established 1982, the Scotchmans Hill label has become synonymous with consistency and universal appeal. From great Bellarine vineyards refreshed by the maritime climate moderated by Port Phillip Bay and strong, cool Antarctic winds, Pinot Noir is grown to sandy loam and volcanic clay over broken down basalt subsoils. Located on the Bellarine Peninsula, Swan Bay was named by Commander Matthew Flinders in 1803. The wines of Swan Bay are fruit driven in style, offering unbeatable consistency and quality, generous in flavour and designed to be enjoyed young. Grapes are sourced from the best vineyards and vinified at the salubrious Scotchmans Hill wineworks. A rejuvenating style of Pinot Noir, offering excellent mid palate weight and silky tannins, balanced by firm cherry acidity.

The higher altitudes of Adelaide and balmy aspects of Bellarine are the pre-eminent Australian microclimes for growing Pinot Grigio. Components from good vineyards have been assembled around a core of estate grown Scotchmans Hill fruit to achieve the consummate Italianate varietal wine in refreshing, new world styling. An intense expression of pear, guava and citrus, fleshy with a mineral backbone. It displays zesty pear and citrus characters, offers great intensity and varietal complexity before lingering on a clean flavoursome finish.

An assemblage of Chardonnay from the right side of Port Philip Bay. A backbone of fruit from the Scotchman's vineyards is supported by parcels grown to good vineyards around Bellarine and Geelong. Of particular importance to Shadowfax are the very close relationships with a select group of growers who provide harvests of the most intensely flavoured fruit. A prolific trophy winner, Shadowfax are a refreshing new wave, vigorously fruit driven, livelier than her Victorian siblings, characterised by slatey, flavoursome acidity, a touch of lees complexity and judicious dryness. A modern style that's perfect for cosmopolitan fare, offering excellent palate weight and solid structure, to accompany fresh fried flatheads or grilled and marinated spatchcock.

This is what fully emancipated Chardonnay tastes like. The magnificentally slow ripening aspects of Macedon Hills sire a style of Chardonnay that defines Victorian viticulture. Wonderfully perfumed with delightfully complex aromas of white flowers, lightly grilled nuts, grapefruits and earth. A concentrated, complex yet magnificently balanced, expansive palate, articulating its cooler origins. Grapefruit pith, citrus and floral flavours are complemented by maritime characters of melon, soft pears and figs. Scotchman's Hill can source grapes from the higher altitudes of King Valley, where the crisp and saturate microclimes develop Chardonnay that's renowned for sparkling wine. A backbone of fruit grown to vineyards nearby the Geelong winery is vinified alongside parcels of cool ripened King Valley Chardonnay, achieving a remarkably mouthfilling blanc de blancs style exhibiting elegance and poise. One of Victoria's stellar performers puts their stamp on Australian Shiraz. The windswept maritime aspects of Bellarine Peninsula punish vines into extracting the maximum amount of cool climate spice while developing the ripest, luscious berry flavours. The Scotchman displays an engaging intensity of Shiraz fruit characters, pliant tannins and crisp acidity in support of liquorice and plum notes, along with vibrant Bellarine expressions of freshly milled spice, minerality and brine.

One of Australia's most esteemed and enduring white wines, completely unoaked, a fresh and vital Sauvignon Blanc to be consumed in it's youth. Low yields and careful management in the vineyard translate into a wine of elegance, complexity and irresistible varietal charm. A lively wine of intensity and well defined cool climate Sauvignon Blanc characters, brimming with fragrant tropical highlights, vegetal, gooseberry and slate.

One of Australia's most perennially feted and esteemed Pinot Noir, generously flavoured, brilliantly balanced, stylish and approachable. The Geelong/ Bellarine area has a long history of viticulture, which dates back to colonization by Swiss immigrants in the 1840s. Curiously, Pinot Noir is a wine that performs well in the cooler climes of the lower Swiss Alps. It remained however for Scotchmans Hill to establish Geelong as one of Australia's leading winegrowing regions, due in no small part to the quality and consistency of their splendid Pinot Noir.

A powerful yet refined Chardonnay, characterized by its excellence and intensity. Scotchmans Hill is vinified from the choicest parcels grown to low cropped, slow ripening vineyards on Victoria's Bellarine Peninsula, a tight and impeccably structured, elegant wine, expressing fully the maturity and quality of the vineyard, as influenced by maritime climes moderated by Port Phillip Bay. Scotchmans Hill is regularly blown by strong, cool Antarctic winds, which punish the vines and encourage the yield of intense grapes exhibiting a concentration of flavour.

Each and every vintage presents Robin Brockett with a new challenge, no two growing seasons are the same, a truly great vineyard will take the vagaries of vintage and achieve a harvest that's truly unique. Brockett takes the fruit that's most articulate of terroir and clime, there's never very much of such high standards, enough for just a hundred cases of Bellarine's best. The fruit of Swinburn Vineyard is defined by its dark red fruit pectins, thick skinned cherries and dewy bramble, a curl of cedar oak and twist of the spice mill, a seamless ruby tannin finish.

The finest Shiraz off Bellarine Peninsula bear an uncanny resemblance to the elegant old classics of Cotes du Rhône. It's the blowy chills of Port Philip Bay, so akin to the sobering Mistrals along Valley Rhone, which stimulate the vines and assuage the fruit to ripen slowly, intensifying flavours and cultivating the tannins. A sophisticated Shiraz style, redolent of ripe dark plums, pepperyness and black cherry behind a gentle veneer of costly cedar oak. Welcome old world Syrah in a very Aussie way, firm fine tannins and long lingering flavours on the lasting, savoury finish.

It was the wave of Swiss pioneers in the 1860s who discovered that the balmy coastal climes and rich loamy terroirs of Bellarine make magnificent wine. The region is now best known for its excellence in viticulture, Robin Brockett takes his pick from the most superior vineyards. Fenwick makes mighty Pinot Noir, a rich and complex style of sweet red rhubarb, strawberries and parched forest fruits, pursing whole bunch notes and savoury stalk, its juicy red berryness over soft well defined tannins, pastoral freshness, sasafras spice and timely oak.

Robin Brockett has been chief winemaker at Scotchmans Hill since the 1980s, he knows Bellarine's best growers and is completely conversant with every microclime around the greater Geelong. Amphora is the Tete de Cuvee, the top cut of Shiraz from the most superior vineyards, a cull so strict, that only a hundred cases are made. Its dulcetly sweet perfumes of peppery plum are unlocked by a measure of the fragrant Viognier, underpinned by silky chocoate tannins, lingering on a velvet length of raspberries, rose petal and turkish delight.

Provenance was established with the objective of making great wines that exhibit the quality of fruit and terroir from choice vineyards in and around the Geelong viticultural precinct. The most pristine grapes are assembled from the Provenance Moorabool Valley property. A component of the finest Bellarine Pinot Noir from the proven Grassy Point site is included. Parcels from the eminent Pierrepoint vineyard at Henty adds another dimension. A portion from the Sinclair property near Ballarat, grown to ancient ordovician soils at 500 metres contributes wonderful bright fruit.

The tall ship Evening Star docked at Port Phillip harbour in February 1856 carrying the Pettavel family, destined for the expanding vineyards of Geelong. Experienced growers recruited in Switzerland were central to the expansion of viticulture and winemaking throughout the Bellarine Peninsula. The Evening Star range is focused on articulating the vibrant Geelong fruit characters, a course of cool ferments serves to retain the lifted elegant, floral aromas and crisp citrus, apple pear flavours, which linger on a fine, mineral acid texture.

Sourced off the earliest plantings of vine, now in their fourth decade of maturity, Norfolk represents the most superior bottling of Pinot Noir within the Scotchmans Hill portfolio. Fruit is all hand picked, whole bunch and wild yeast fermented before transfer to a high proportion of new French oak barriques for extended term of age. Alluringly complex with lifted scents of strawberry, beetrots and plum, its cherry sweetness and pastoral savouryness resolve on a satin sheened, spiced oak finish, ripe fine grain tannins assuring structure, balance and controlled power.
